Striper66, ask and ye shall receive!

On another thread 3Macs posted a pic of his goo lash as he calls it, with apparently way too many onions and garlic, lol. Striper66 suggested we have a winter supper topic so let’s do just that.

let’s try not to let this get hijacked too badly like every other thing we talk about. Let’s try keep it to “winter” meals I guess. Those suppers you make or ate growing up when the weather is miserable. Classic comfort food for a stormy winter.

I will be making a Dutch dish here soon, possibly supper tonight, called boerenkool. I will take some photos of it as I go.

I guess the word comfort food goes a long way with me.Something about being outside in the cold during a time of year when activity seems to slow down for most of us.Coming inside to smell that roast slow cooking in the oven or stew in the slow cooker just brings me happiness and seems to lower stress as well.Relaxing.Its really the only thing i enjoy about this time of year☺Oh and the heat of the woodstove and a couch with a comforter

Here’s supper tonight. This is from a Dutch family who I grew up with and spent most of my childhood biking up to their dairy farm to spend the days helping their oldest son, my best friend, do the chores or ride along in the tractor all day. Ended up working as a farmhand there for years when I got older as well.

It is called boerenkool which basically translates as “farmers cabbage” and is their name for kale anyway I believe.

It begins with a pot of diced potatoes and chopped up kale, fill with water and dash of salt like everything that’s boiled. Set this to start boiling like any other mashed potatoe pot. The kale will wilt and soften as it all boils.

Reading about it online I believe the “proper” method is to cook a smoked sausage, a bigger one, in the pot with the potatoes essentially steaming it. I just fry them in a pan, some nice smokies are perfect but fresh sausage is good to. I fry them and then add a couple cups of stock to braise them at the end. Remove sausages and make a gravy from the stock. Mash the potatoes and kale with some butter and milk.

Now to serve, according to my friend the proper way (his at least lol) is as follows:

Lay a big bed of mash, flatten it out and make a hollow in middle. Spread mayo on it. MAYO, not the miracle crap. The Dutch love mayo.

Lastly fill the well up with gravy and add a sausage. I like to slice the sausage and use the slice to scoop a big bite of mash and gravy.

Im no fan of kale, but in this you don’t even notice it besides the Color. I tell you this is one plate that will absolutely stick to your ribs on the way down and stay there for a while!

Just made my pea soup stock yesterday afternoon. We had a big baked ham few days ago. Saved some meat, added a diced onion and boiled the bones, trimmings and fat for 1 3/4 hrs. Turnip, carrots and 2 bags of split yellow peas to go in this afternoon. Some fresh rolls, salted crackers and lots of pepper !!
Can't wait !
Im really digging this whole save the leftovers and boil them for stock.If this is as yum as the lobster stock i will be trying it im a big fan of pea soup even the habitant stuff😃

The pig i got this year was 358lbs !
Cost me just over $1/lb , $397, at Reid's
That included the killing, cut, wrap, smoking
We generally sell half so we dont eat freezer burnt pork and are out before we get the next one.
Weve been trading deer/pork for years and can usually get one other pig trade each year. Steve was the lucky recipient this year
So you raised the pig urself then took to reids for killing and processing correct?

Dave , was it not you who posted a crock of homemade beans not long ago. Beans with homemade bread and green tomato chow chow.
Thats another meal that I forgot about.… my mothers baked beans on a Saturday night. She would put big chunks of corned beef in it. Had the beans with a side of meat, and slice or two of brown bread.
Now thats comfort food.I try to corn or pickle some bear deer and pork each winter.To buy a piece of corned beef is rediculously expensive, a wifes friend brought over a small piece from superstore recently and it was $18 and id say 40% of it was fat.

Last nights supper and only the third time making it but tastes good if you like donairs
It is a donair drip they call it with home made meat and sauce which you place on small home made pita breads and fold over sorry all the breads are gone to show :D
I like donairs very much.Any chance you can share recipie ?

This recipe is for a 2 lb loaf
2 lb medium ground beef
2 tsp cayenne pepper
2 tsp oregano
2 tsp paprika
2 tsp garlic powder
2 tsp onion powder
1.5 tsp salt
1 tsp black pepper
Mix everything together. Form it in a ball and throw it on your counter with some force ( i usually do 30-40 times)
Shape it to a uniform size and I always wrap it in plastic and refrigerate over night.
put it on a rack on a foil lined cookie sheet (what I use)
bake at 350 for approx 1 hr or until 160-170 internal temp. Let cool … slice … and throw it in a frying pan to heat it up. I don’t do the homemade sauce. I just buy it.
**** sometimes I just bake it in a loaf pan.
**** not entirely sure if refrigerating it overnight will benefit it much or not... But I always do.

They sure are today here is take out chinese food my treat thanks to some 50 year old tiller parts I sold yesterday to a dude that came all the way from halifax for them. Says he has been looking for over a year up there and found nothing not shocked few still have the old good stuff any more. Me to keep my sugar down I fried more smelts :( Going to turn into a seal I think
Enjoy the donairs :)
Smelts this good only this time of year so i chow down on them too.

Bear roast today nothin fancy just flopped into slow cooker on low for the day with a bottle of vh strong garlic sauce and covered with bbq pit boys poultry perfection seasoning and some thin sliced potatoes mixed in oil smoked paprika and chili salt done in air fryer😋
