Made speggi sauce and meat balls this morning, diced up every thing for the lil wifey's stir fry...she's not a pasta / italian / or meatball lover, so what hunny wants...hunny gets !

Thank goodness my wife doesnt like wild meat🤣have been spoiled with food so far this weekend so i figured why not continue deer liver onions and air fried potatoe mmmmmmmmhmmmm only thing would make it better is some homemade chow or pickled veggies😬Or maybe some homemade bread or rolls😅None of which we have here so the liver onions and home fries have to do

Took the last 2 lb of my big scallops (ComeaeriesS
Took the last 2 lb of my big scallops (Comeau / Metegan) out last week...fried em in garlic /butter then my fresh frozen shrimp...made 2 packs of Knorr's Alfredo Parm linguini noodles..added my scallops and shrimp...man..what a scoff !
***Food coma shortly thereafter...ha ha ha
Can I come live with you ,I am clean and do not require much room and if you feed me I will let you beat me in the Nova Series but I like dark rum with seafood😋😋

Wow I would kill someone for a coors light :( Yep 24 in the basement and not allowed any more and have to remember to give them to my bud before they get too old
Mama is buying chinese food tonight for us with HER income tax return and I am sending them more money as usual :( But not a lot this year :)
What is the meat on your plate back bacon?? or pea meal

100% correct the meat is cold smoked back bacon

Well, made a pot of Cajun Gumbo with chicken, shrimp and Polish Kielbasa ( can't find Andouille, ever). I make my own Cajun seasoning for it as well.

It's actually for supper tomorrow but I figured I would have a little sample.
Ah, the flavour, is right on the money!

Does have Okra in it, Kevin. The roux is the important part. Heaping cup of flour and 2/3 cup of vegetable oil, cooked on medium low heat, stirring constantly until it turns darker than peanut butter and the consistency of cookie dough, then the stock, green onions, parsley, green pepper, celery, yellow onions, cajun seasoning, cooked chicken, shrimp, fried sausage. The depth of flavour is amazing!

Looks great .Keep your eyes peeled at walmart and sobeys for Meadow Creek products they make it I have got it at both places over the years also Pete's in halifax
Pete'e food place I think it is called or was but take lots of cash there and different brand cannot remember what :( IF not ask the meat manager at sobeys and I would say he can get it for you since it is stocked normally in some of their stores or if you have a friend driving back from alberta it is every where up there the meadow creek products and they could grab some and toss in a small cooler IMO polish is fine but just not the same as you know :)

There is a meat shop on robie across from rons army navy we stopped in there first time couple months ago they have a large selection of sausages and meats they smoke them all on location very cool little spot they likely have andouille.

Any other sous viders out there?Its my go to for bear meat lets me cook it rare so its still nice pink and juicy.I usually do bear steaks at 145 for 4 hrs then onto the grill for quick hot sear both sides so tender.
Got couple striploins going at 133 for 3 hrs soaked in oil salt and pepper than will be seared on the barbeque if you havent tried sous vide and like consistent cooked meat done to perfection each time i highly recommend
